Daily Recipe : Nova Scotia Maple Syrup Cake with Maple Syrup Cream Cheese Frosting
Today’s recipe is a bit of a mash-up (the photo is not the recipe listed below), but I wanted to have a visual aid in order to entice you further. :)
I’m very proud of my maritime Canadian roots, and Nova Scotia has some fantastic fresh foods available—fish straight off the boat, vegetables grown in the rich soil of the valleys there, etc. If you want examples of the amazing foods there, check out this list of recipes.
But, back to maple syrup.
I’ll eat anything with maple in the name. Maple candy, maple ice cream, maple cupcakes & brownies…so long as the maple is 100%, Canadian maple. I don’t want that cheap, fake stuff anywhere near my mouth. That’s one foodie rule I will not bend on.
So, convinced yet? You should be, because everyone loves cake and everyone should love maple syrup, and who doesn’t enjoy a good cream cheese frosting?

Ingredients for cake:

1/2 cup shortening 125 mL 1/2 cup granulated sugar 125 mL 1 tsp vanilla extract 5 mL 1/2 cup pure maple syrup 125 mL 2 eggs, lightly beaten 2 1 3/4 cups all-purpose flour 425 mL 2 1/2 tsp baking powder 12 mL 1/2 tsp salt 2 mL 1/4 cup milk 50 mL 1/2cup chopped nuts 125 mL 

Ingredients for frosting:

1 4 oz (125 g) pkg cream cheese, softened 1 1 Tbsp maple syrup 15 mL 1 1/2 cups icing sugar 375 mL

Cake recipe:

In a mixing bowl, cream together shortening, sugar and vanilla until well blended. Gradually beat in maple syrup. Add beaten eggs to mixture. Stir until well blended. In a small mixing bowl, combine flour, baking powder and salt. Alternately add the dry ingredients and the milk to the maple mixture until well blended and smooth. Fold in nuts.
Place batter in a greased 8 x 8 inch (20 x 20 cm) baking pan and bake in a preheated 350°F (180°F ) oven for 45 minutes or until tester inserted in the cake comes out clean. Cool.
Makes 16 pieces.

Frosting recipe:

In a medium sized bowl, mix together cream cheese and maple syrup until smooth with a hand mixer. Gradually beat in icing sugar until smooth.
